Sunflower has a lower smoke point (about 392 degrees Fahrenheit) compared to safflower (about 450) but that’s no matter in a bread machine which will not heat that high. I highly doubt the texture will differ (if it’s it’s the same amount of FAT, it likely will have the same texture) but I confess I don’t know the taste of either oil so I can’t tell you how that aspect would change.
